Spicy Black-Eyed Peas Recipe : Paula Deen : Food Network
My mother is a Gibbs. They were one of the early families to homestead in Alabama. She was raised on a family farm that we enjoy visiting for the family reunion every year. Throughout my life, we have always had Black Eyed Peas on New Years day. We are happy to carry on the tradition as we raise our family. This recipe from Paula Dean is the real deal.
In the old days, if they did not have a ham bone, they would use bacon - but either way - start with ham and fried onions as a flavor enhancer to the peas. Add salt and pepper to taste before serving - it preserves the flavor of the fresh pepper. Paula adds the can of tomatoes and chiles during the cooking - which is fine. My mother prefers to dice tomatoes, chilies, and parsley and serve it on top as a condiment.
